Every once in a while a cookie recipe comes along that’s over the top delicious. Last year when we were still living in Chicagoland my friend Leah made these Reese’s peanut butter cookies and brought them to playgroup. They’re pretty big and I remember grabbing half of one, trying to not indulge myself too much. It didn’t take long before I went back for the other half, and then proceeded to go home that night and make an entire batch for our family. They quickly became a household favorite.

In addition to being one of the best cookies I’ve ever had, they are SUPER easy to make. You literally just dump in the ingredients in the order listed, mix up the dough and voila! In about 15 minutes you can be tasting one of these delectable gems hot off the press.

Reese’s Peanut Butter Cookies (Recipe slightly adapted from Real Mom Kitchen)

Ingredients: 

-3/4 cup butter or margarine, softened

-1 cup sugar

-1 cup brown sugar

-1 cup peanut butter

-2 large eggs

-2 tsp vanilla

-1 tsp baking soda

-1/2 tsp salt

-2 1/2 cups flour

-1 1/2 cups milk chocolate chips

-16 mini Reese’s peanut butter cups, each cut into 4 pieces

Directions: 

1. Preheat oven to 350 and grease cookie sheet.

2. Mix the ingredients down to the vanilla. Add soda, salt, and flour. Fold in chocolate chips.

3. Using an ice cream scoop, fill the scoop with dough. These are big cookies! Place 6 scoops of dough on the cookie sheet. Use your hand to slightly flatten each scoop of dough. Bake for 12 minutes.

4. Remove the cookies from oven and lightly press 3- 4 cut up pieces of Reese’s into the top of each cookie. Return to the oven for 2 minutes. Cool on baking sheets for a couple minutes before moving them to cooling racks. Best if eaten within a day a baking. Makes 18 cookies.

And with that I’m headed out to the library with Baylen, before heading on a birthday date with Jake tonight! I turn the big 2-7 today…I think that is reason enough to sneak an extra cookie or two from the jar, right?!

    Oooooh, girl. I need to make these again soon :). I feel like I pin so many things and love when I try them, but then forget about them because I want to try other new stuff. So, thanks for reminding me how AMAZING these are. And yeah, I’ll need all of your bootie shaping posts to help me after I stuff myself full of these fatty goodies! 🙂 haha!
