IMG_9247This morning I had to go to the dentist for a routine cleaning. Ugh, how I hate the dentist. If it weren’t for my husband who is the one in the house who prioritizes our dental health, I probably would have postponed my visit until who knows when. I’ve always had bad luck at the dentist. No matter how often I brush, floss, and rinse, cavities flock to me. For this reason, I have to do some serious mental preparation before each appointment. This time, the prep talk was in the form of a reward, being this delicious Strawberry Lemonade Fluff. As I painfully endured the scraping and cleaning, and news about a couple more cavities, I kept my eyes on the prize.

When I got home, I pulled this beauty out of the freezer for a little dessert before lunch. Not only did it hit the spot, but it also helped to soothe my bleeding and swollen gums (did you know that’s a lovely symptom of pregnancy and breast feeding that some of us are lucky enough to get?!).

IMG_9246This was the first time I’ve made something like this, but we decided it’s a winner. Even though I’m usually a chocolate dessert lover, this one will be perfect for the Spring and Summer months when hearing the words strawberry and lemonade together makes my mouth water.

Strawberry Lemonade Fluff

Ingredients: 

-15 1/4 can crushed pineapple, drained

-1 cup sliced fresh strawberries

-14 oz. can sweetened condensed milk (I’d suggest adding a little less if you don’t have a major sweet tooth.)

-6 oz. can frozen lemonade, thawed

-8 0z container light cool whip, thawed

-2 cups mini marshmallows

-1 tablespoon sugar free strawberry jello (straight from the packet)

Directions: Combine pineapple, strawberries, milk, and lemonade; fold in Cool Whip, marshmallows, and jello. Cover and freezer for at least 4 hours before serving.

Thank goodness for desserts like this that make life a little sweeter, amongst things like dreaded dentist visits, even if they may the culprit for a couple extra cavities from time to time. 😉
