IMG_9581Lately when Jake gets home from work we’ve been taking advantage of the beautiful weather by strapping the kids in the stroller and going for a family walk. Our destination is usually a playground for Baylen to climb around on. There are so many parks in our neighborhood, and since we’re new to the area, it’s always a fun adventure to discover a different one! He’s at an age where he gets super excited anytime a playground is within sight, and will point and beg to get out of the stroller so he can run and climb. He plays hard, and usually goes until his little legs barely carry him anymore.

We cherish those moments out and about with our family so much, that we hate to rush back to make supper. So we’ll usually throw something on the grill really quick when we get home. But the other day I turned to my slow cooker so we would be able to enjoy the park for even a smidge longer. All we had to do when we returned home was fill our plates and sit at the table.IMG_9584This was a new recipe to our family, one that I discovered from Mix & Match Mama. I started reading her blog because she’s Sean the Bachelor’s sister, but have continued to follow her because of her awesome family friendly recipes! This particular recipe for Chicken Cordon Bleu will definitely make its way into our menu rotation fairly frequently from now on. It only takes about 5 minutes to prep, a few hours to cook, and is one of the best meals that’s come out of my kitchen in a while. IMG_9586

Chicken Cordon Bleu

(Slightly adapted from Six Sisters Stuff Cookbook found via Mix & Max Mama.)

Ingredients:

-1 can cream of chicken soup

-1 cup milk

-6 boneless, skinless chicken breast halves

-6 slices of deli ham

-6 slices swiss cheese

-1 package dry stuffing mix (I used Stove Top)

-1/4 cup butter, melted

Directions: In a small bowl, combine soup and milk. Pour enough of the soup/milk mixture into the slow cooker to cover the bottom. Wrap a slice of ham around each of the chicken breast halves. Place them on top of the soup. Cover each breast with a slice of swiss cheese. Evenly pour the rest of the soup mixture on top of the chicken. Sprinkle the dry stuffing mixture on top of everything. Pour melted butter on top of the stuffing. Cover and cook on low for 4 – 6 hours, or high for 2 – 3 hours. It goes great paired with a fresh salad!IMG_1182IMG_1183

    Adding this one to my list too! I think if I do it on simmer all day..since I’m gone for almost 10 hours…I could make it work. 🙂
