Two years ago, I took a chance on myself.

At the time, I had four kids (four and under). My youngest was six month old, and I was completely exhausted.

It was February. I had just turned 29 and Jake and I were on the way home from a trip to Hawaii. I was feeling defeated, because every photo I saw of myself in a swimsuit made me wonder if I’d ever feel comfortable in my own skin again. To the outside world, anyone who saw me probably would have thought I looked just fine. But it didn’t matter. I felt lousy, I had no energy, and I was desperate for something, ANYTHING to help me out of the rut I was in.

During one of our layovers, I was scrolling through Facebook when I noticed that a friend of mine was talking about the 21 Day Fix, an exercise program she was using that had given her amazing results. My mind told me it was probably some kind of scam, but my heart told me I needed to try it.

I ordered it on a whim (against my husband’s wishes).

It arrived to my house, and I started to push play. Day by day I started to get stronger. I started to see inches melt away and I started to feel like myself again for the first time since being a mom.

My Side Hustle Saved My Life

A year and a half ago I was a stay-at-home mom to four kids. My oldest was three, my twins were two, and my youngest was 6 months. I was drowning, my husband was working ALL THE TIME, and I was alone with the kids close to 24/7. I felt sorry for myself. I didn’t feel like anyone around me really understood what my days were like, and I honestly dreaded when Sunday night would come around knowing Jake had to go to work the next day.

I felt confused. Why didn’t being a mom feel like enough? Isn’t this what I was created to do? I should be so happy to be at home while my husband works as much as he needs to so he can provide for our family. I should LOVE my time with my kids.

As I thought about it more, I realized the issue wasn’t that I didn’t love the time with my kids. Because I did. I loved the ordinary moments with them, watching them grow and learning something new every day. I loved playing with them and reading to them. I loved watching them become best of friends with each other as they all became mobile and running all over the house. I LOVED being a stay-at-home mom.

The REAL problem, was that somewhere along the way I completely lost myself. I was so focused on my family and making sure that we were keeping our heads above water, that I forgot how to focus on anything else.

I reached a low one day when I looked in the mirror and asked myself who I was anymore. How did I get to this point? I didn’t have time for hobbies or anything that filled me up. Even my body didn’t feel like my own. I was carrying baby weight, living off my kids’ leftovers, and so tired that by the time I put my kids down to nap every afternoon, my head would hit the pillow and I’d be out too. I’d wake up feeling totally out of it, and the next few hours until Jake came home each evening felt like they lasted FOREVER. 

Sometime in there, Jake and I got to go on a trip just the two of us. I was in a swimsuit the entire week and it was my breaking point. I vowed that day that I would never let myself feel so low about my body every again. I’ve never been overweight, and some people would probably say I had nothing to feel low about, but the truth is, it doesn’t matter how we “look” on the outside. It’s how we feel on the inside that affects everything else, and I felt lousy.

The rest is history. I tried the 21 Day Fix and Shakeology, and for the first time since becoming a mom, I actually felt like a piece of me was coming alive again. I had confidence, I felt sexy, I had energy, I saw myself in a positive light, and all I wanted was for other moms to experience the same hope I had.

I was at a crossroads. I loved the 21 Day Fix and Shakeology, but did I REALLY want to join one of those “pyramid scheme” things? I was the biggest skeptic of network marketing, and would roll my eyes at my friends who did it.

At the end of the day, I decided that the only thing getting in the way of me helping a lot of people was my pride. In reality, after doing my research, I learned that it was the farthest thing from a pyramid scheme. I became a Team Beachbody Coach. At first it was just so I could get a discount on Shakeology. Then a fire lit inside me. I saw the potential to help thousands of people by building a team, far more than I could help on my own, and I decided to go for it.

Little did I know the decision I made that day would completely change the trajectory of my life.

Since I started as a Team Beachbody Coach in April of 2015, I have experienced many ups and downs. It took some time to transition from a stay-at-home mom to a work-at-home mom. It took some time to learn how to work the business in a way that felt authentic to me. It took some time to learn how to effectively lead a team and help my coaches start on their paths to success.

But man, I’m so glad I was willing to lay my pride aside. Throughout this journey, I’ve found myself again. I’m no longer the nagging wife texting my husband wondering when he’ll be home. I’m no longer the mom who has no energy to play with her kids. I’m no longer focused on myself and pouting in a corner about how hard life is. I have something of my own and it feels amazing.

I started thinking that it would be a passion project, and that if I made any extra money, that would be an added bonus. Today, it’s still a passion project. I coach because I truly love my clients and coaches, but I’m also building a business that will leave a legacy for my family. I’m sending my kids to private school with the money I’ve worked for. I’m setting aside money for their college education, and I’m teaching them how to be generous to others. I’ve been able to take some of the financial burden off of Jake, and our marriage is less stressed because of it.

Today, I’m still focused on being a mom and wife, but I’m also focused on people outside my family. I’m using the gifts that God’s given me to connect with others, to build them up, and help them rediscover who THEY ARE!

I thought this Beachbody Coaching thing would be a nice side hustle, but it has absolutely saved my life. I’m me again! My cup is filled up daily! There’s no greater feeling in the world than feeling like you’ve found your calling. Beachbody Coaching is the perfect fit for me. I’ve found my people, my positive community of like-minded Christian women who want to serve others. What a JOY it is to be on a mission together. The best part? We still get to be at home with our kids. We get to pick our work hours and have flexibility to enjoy the sweet moments with our growing children. I’m forever grateful for this opportunity, and I’m so confident in our mission. My heart gets so happy when I get to share it with others.

I Thought I Was Too Good For Sunscreen. Then I Was Diagnosed With Melanoma.

I’ve lived in the midwest all my life. By the time summer comes each year, and the weather finally gets warm enough to go outside without layers upon layers, I’m SO ready to soak in the sun.

I was born and raised on a farm, and was outside constantly. I’ve always tanned easily, and loved the challenge of trying to get as tan as possible. When I was in high school, I worked as a lifeguard. I rarely wore sunscreen even though I was teaching swimming lessons and lifeguarding 10 – 12 hours a day.

I’d see other people put sunscreen on, but frankly I thought most of the time it was lame. I didn’t need sunscreen.

I went to college in Minnesota, and come winter I’d go to the tanning bed to warm up and get a little color. I hated how I looked when I got to be pasty white!

After college Jake and I enjoyed a few years of kid-free married life. We took so many vacations when I never applied a DROP of sunscreen.

When I started having kids, I started to think about sunscreen. I made sure to apply it on them when they were out in the sun, but still didn’t bother to put it on myself. In fact, if I got it on my hands, I might even wash it off.

During each of my pregnancies, I developed more and more moles. I’ve always been a moley person, but pregnancy gave me 20 times MORE! I had a few that I was worried about, so in June I went for a mole check. The dermatologist gave me a full body scan, and none of the mole I was worried about were concerning to him. The only thing he was concerned about was a tiny mole on my foot. I NEVER would have gone in to the dermatologist to get it checked. It was so little and not raised at all.

He removed it to be biopsied, and a few days later I got a call. It was him calling and not one of his nurses, so I knew it was probably serious. Sure enough, he told me the mole came back with a diagnosis of melanoma. Thankfully, it was still in the early stages, so they did a surgery on my foot to take out a large chunk of skin, and after a couple weeks, I was back to normal.

It all happened so fast, that it almost seemed like it didn’t happen at all. But it’s wild to think about what could have happened had they not caught it early. He said once melanoma gets into the bloodstream, there’s pretty much nothing they can do. He has several melanoma patients who he monitors regularly for a few months or years, knowing that there isn’t a cure, and that it will only be a matter of time until they stop coming to see him.

I’m 30 years old. I have so much life ahead of me. I have four beautiful kids. I have a wonderful husband. I have a career that I love. It’s crazy to think just how much I could have missed out on. I’ve always been insecure about my moles, but now I’m grateful because if I hadn’t gotten all the bigger moles, I would have probably waited a while to go in for a check. Within the next months and years, I’ll be getting several more moles removed as a precautionary step. He said we’ll remove ANYTHING that’s questionable.

I thought I was too good for sunscreen. That all changed the day I was diagnosed with melanoma. This summer has looked very different than most. I don’t leave the house without sunscreen. I’m white as white can be, and I’m okay with it!

My sweet sister-in-law, Madison, made this really easy for me. The minute she heard about everything she sent me a bottle of her amazing sunscreen and tinted moisturizer with SPF 20. She’s a Beautycounter consultant, and ever since this scare I’ve become much more open-eared to everything she’s got in her back pocket. A Chance For YOU To Be On An Infomercial!

Hey everybody!

I have a pretty cool opportunity to share with you today, but before I do, I wanted to share my backstory in case you haven’t heard it.

A little over a year ago I was at a point post baby #4 when my maternity clothes were too big, but I still wasn’t fitting into my pre-baby clothes comfortably. I didn’t feel my best and it was affecting my mood toward my husband and kids. I spent most of my days wearing yoga pants and baggy shirts to try to hide my problem areas. We had been so busy with the kids that we weren’t prioritizing nutrition. We’d order in take-out several times a week and our diet was pretty heavy in carbs. We were operating in survival mode, and I was sick of it. I reached a low after we returned from a trip to Hawaii. Spending an entire week feeling self conscious in my bathing suit was my breaking point.

When we got back I realized that I had to make a lifestyle change. I wanted to kick the extra baby weight and flab to the curb once and for all and needed something to give me a little extra motivation. I saw several friends on Facebook talking about the 21 Day Fix and Shakeology, and for months I’d ignored it. I figured it was probably just another one of those schemes for people to make money off me. But when you’re desperate for change, you’re willing to try just about anything.

I told Jake I wanted to try it, and to be honest he shot me down. We already had a gym membership and he wasn’t excited about spending more money on fitness than we already were. I may have pitched a little bit of a fit, and later that week I placed my order.

When I got my box in the mail I was giddy and slightly terrified. I ordered the 21 Day Fix Challenge Pack which came with a 30 day supply of Shakeology, seven 30 minute at-home workouts, a nutrition plan with portion control containers, and a free 30 day trial for Beachbody On Demand that allowed me to stream the workouts online.

Even though I had been going to the gym regularly, I went through a round of the 21 Day Fix and got my butt kicked in the BEST kind of way. I learned how to eat whole healthy foods in the right portions, and worked muscle groups that I don’t think had EVER been worked before! I was loving my results and for the first time since having my kids I felt like my body was starting to feel like my own again.

After a few more rounds my body needed another challenge, so I ordered the 21 Day Fix EXTREME, which is an entirely different series of workouts that are even more challenging.

The 21 Day Fix EXTREME contains more plyometrics and more intense circuits. When Jake and I went to Vegas in July I felt SO different than I had when we were in Hawaii in February. I actually WANTED to be in a swimsuit!

Since last summer, I’ve tried several other Beachbody programs, and I’ve loved them all for different reasons, but the program I keep going back to again and again when I want to feel REALLY toned and defined is the 21 Day Fix EXTREME. It’s hands down my very FAVORITE Beachbody program at this point. I love the workouts and the celebrity trainer, Autumn Calabrese, who leads them. When it comes down to it, I’ve realized that in order to maintain a healthy lifestyle, you have to find your soul mate workout. Something that you actually look forward to, otherwise it’s far too easy to come up with an excuse to skip it!

The pictures below show the progress I’ve made since I started last year. Why do I share these photos? If you know me personally, you know that it isn’t easy for me to put myself out there like this. But I still do it because taking care of my physical body has impacted every other area of my life. I have more energy for my kids, I feel sexy and actually want to be intimate with my husband, and mentally my stress and depression level is kept to a minimum because of the amazing endorphins our bodies were designed to release when we break a sweat! Working out has become a time of worship for me, to reconnect with my Creator and remind myself that I was fearfully and wonderfully made. In the chance that my results inspire you some of you to carve out some time for yourself, sharing them is completely worth it to me, despite what other people might think of me for doing so.

I haven’t been perfect along the way, and I’m definitely still on my own journey, but that’s the beauty of life, you know? Walking alongside each other, recognizing that none of us have it all figured out, but that by leaning on each other we can accomplish amazing things.

A Diet That Every Farm Kid Can Get Excited About

I grew up on a feedlot in northwest Iowa. My dad has been raising cattle since before I was born, and these days he and my brother Jason are tag teaming it, working hard every day to bring the world quality beef that (in my opinion) tastes better than anything on earth.

Growing up, our meals consisted of meat, potatoes, and veggies, with plenty of butter to make them taste delicious. Today, my favorite meal is still a piece of red meat, and lucky for me, my parents keep us stocked with a deep freeze full of it.

At some point, though, I decided I wanted to be “healthy” and everything I read told me to choose chicken and fish over red meat. I’ve never completely given up beef, but I did cut back significantly. Additionally, I switched from pork bacon to turkey bacon, and the list could go on and on. I figured that was just the way it had to be if I wanted to take care of myself.

About a month ago, I was listening to a podcast that was talking about a high fat, moderate protein, low carb diet. It piqued my interest because for YEARS I’ve been buying low fat everything. Low fat yogurt, low fat milk, low fat cottage cheese, and had basically cut out butter all together, replacing it low calorie cooking spray whenever I made eggs, ect. Instead of fat, my diet has been high in protein, and what I learned is that I was actually focusing on protein too much.

After I listened to the podcast I decided to do a bunch of my own research, trying to figure out what made sense to me.

Studies have shown that by taking fat out of our diets, we are actually more susceptible to Alzheimer’s and other problems in the brain. Now, we’re not talking about pizza or cupcakes being healthy, but real healthy fat. The kind of fat we find in beef, and butter, and coconuts, and avocados, ect.

So if fat isn’t making us fat, what is? It might actually be eating too many grains paired with not enough exercise. Think about it. Farmers know this best. If you want to fatten up cattle, feed them some grain and as long as they don’t move around too much they’ll pack on the pounds. Turns out, the same is true for humans! Interestingly enough, most recent research is showing that people who have heart attacks aren’t necessarily people with high cholesterol from healthy fats, but people eating too much sugar. When I heard that it resonated with me, because my dad had a heart attack last October and he always has very healthy cholesterol levels, but he used to eat quite a bit of candy and other carbs.

After reading up on many different high fat diet options, I ended up circling back to the book mentioned in the podcast, because I didn’t want to go to a super high fat diet known as a ketogenic diet. A ketogenic diet means that you’re getting up to 85% of your calories from fat, and that just didn’t seem like a lifestyle that I’d be able to keep up.

I purchased the ebook called The M.A.D.E. Diet, which takes into account how active you are and gives you a formula to calculate your macros. It also incorporates intermittent fasting, in this context which means that I eat all my food within an 8 hour window so that my body can really reach a point when it’s fasted between 12 – 16 hours where it’s really able to burn off fat stores! For the last month 50% of my diet has come from fat, 30% from protein, and 20% from carbs, and I’ve truly never felt better. I have more energy than I know what to do with!

I now eat eggs fried in butter, red meat, heavy whipping cream, real bacon, almond butter, and other healthy fats on the regular. I’ve found a lifestyle that finally makes sense to me because it’s something I can do long term, and the best of all is that I get to enjoy farm food again without feeling a bit guilty! My mom and dad are in my virtual boot camp starting today, and I created a menu for them today so all they have to do is implement. They couldn’t believe everything I was telling them they HAD to eat in a day! (Turns out after years of me preaching “healthy” food, they already knew what they were doing). I’m excited about this because it seems that every time I talk with people from a farming background that it’s harder for them to get on the healthy living train because they’re scared they’ll have to give up their comfort food. Well, it turns out farmers were right all along. Enjoy farm grown meat and veggies with butter, and you’re on track! Just stay away from too many grains and all the sugar!

I’ve had so much interest in my virtual boot camp that started today, that I’ve decided to open up another pop-up boot camp starting next Monday, June 13th when I can teach more people about how to successfully implement this lifestyle. There’s not a one size fits all diet, but this definitely is the perfect fit for me and I’m excited to share it with others who might feel the same way!

Why I’m More Fired Up Than Ever About Healthy Living

Fit Through The AgesLast October, I almost lost my dad to a heart attack. Almost. He had a 1% chance to live and he survived. A second chance to live life to the fullest. Last week, a spot on my foot was diagnosed with melanoma. Thankfully, they caught it early, and it hadn’t gotten into my bloodstream yet. I was able to have a small surgery to remove it. I’ll write more about that later after I’ve had more of a chance to process. At this point, I’m still in shock over the scare my body went through this past week. It all sort of feels like a dream. All I know is that God has given me a second chance too, and I’m not about to waste it.

Over the last year I’ve started to post more about health and fitness, and maybe some of you roll your eyes because it just isn’t what you want to hear, or you’re tired of yet one more person reminding you that you might need to make a change. I get it. I used to look at healthy people and think they didn’t know how to have any fun. I was the biggest sugar addict, and there was no way I was giving up my nightly bowl of ice cream. “Life’s too short not to enjoy good food,” I thought frequently!

It’s funny how God humbles us though, and sometimes calls us to do things we never thought we’d be able to do. I’m not perfect. Being healthy isn’t always easy. Heck, I’ve started over a million times. But I’ll tell you this: It’s WORTH starting over because every time I get a little bit stronger. It’s about progress, not perfection. That’s life, isn’t it? Let’s just do our best and show up and celebrate it! It’s worth putting my best foot forward to know that I’m doing all I can to be around for the long haul. So I can see my kids grow. So I can enjoy life’s most precious moments.

I’m still a work in progress. We all are. OBVIOUSLY I need to do a better job of protecting my skin, which sucks because I love getting a tan. But now I get it. I’ll force myself to do whatever I can to prevent anything taking me from my kids too soon.

My heart has never been more fired up to help anyone and everyone prioritize their health. This isn’t about making money. It’s about legitimately meeting people WHERE THEY’RE AT, and walking alongside them. It’s about looking each other in the face and acknowledging that it’s hard to lose weight, to make healthy choices, to work out. But that TOGETHER, we can do hard things.

Take my friend, Katherine, for example (pictured below). She is down 37 pounds since February 15th, because she was willing to work her hardest, AND because she had a supportive group of women around her. I can’t even tell you how proud I am of her.

On June 6th I’m leading a virtual boot camp called “Fit Through The Ages” to help more brave souls like Katherine and myself to feel confident and healthy. When God put the idea on my heart for this boot camp, I had no idea that I’d have foot surgery around the same time to remove melanoma. I simply wanted a boot camp that would welcome people of ALL AGES to get healthy. My PARENTS are even joining me, and I could cry just thinking about THAT!

But now, I’m even MORE excited. Because I’m 110% sure that this is my calling. I’m so excited that I’ve invited some of my coaches to help me lead this boot camp so we can help even more people.

I’m reaching a point where my spots are almost filled, but I have several coaches who I’ve hand picked to help. You will still be in the same boot camp with me, meaning that I’ll be posting daily encouragement in a private Facebook group, but THEY will walk alongside you and offer you one on one support to make sure you don’t get lost in the crowd. They’ll love you like crazy and hold you accountable to get the results you want.

A Brand New Organic Candy To Look For At Target

I consider myself a health conscious newbie. I’m a student, and am constantly learning new ways to incorporate healthy living into my family’s day to day life. With that said, I also completely believe in a balanced lifestyle. The 80/20 rule, if you will. 80% of the time, I do my best to make sure my kids eat well-rounded meals with plenty of nutrients. But there are also days when I feed them macaroni and cheese and reward them with candy.

What I’m learning though, is that I can give my kids treats, but be smarter about it than I used to be. For example, a couple years ago I switched from regular macaroni and cheese to macaroni and cheese that is free of artificial flavors and colors. I also switched from the cheapest hot dogs to ones that are 100% beef with lower calories, fat, and sodium. The kids don’t taste the difference between these things, but I feel a little better knowing that they aren’t getting “as much” crap.

When it comes to candy, ideally I’m looking for something that doesn’t have high fructose corn syrup, and contain no artificial flavors or colors. Why is artificial flavors and colors such a big deal to me? Because they have been linked with hyperactivity, allergic reactions, and tumor growth. In Europe, food with artificial colors are now required to include “may have an adverse effect on activity and attention in children!” As a mom to four little kids, the last thing I want to do is welcome in MORE hyperactivity than normal! 🙂

With that said, I know sugar is still sugar. But hey, kids gotta be kids, right? What’s life without a little candy to celebrate the everyday successes?

I was recently told about a brand new organic candy line that’s now available at Target. My ears perked up because I love when I can find things like this without having to go to a specialty grocery store!

Cinco De Mayo The Skinny Way

We’re back from wine country, and settled back into normal life. I’ll be sharing a recap of our entire trip soon!

In the meantime, I’m excited to celebrate Cinco De Mayo! Since becoming a mom, I’ve learned that celebrating holidays like this is a great way to break up the week and add a little something special to look forward to.

Preschool Express has some really cute Cinco De Mayo crafts for the kiddos!

I thought I’d share a few tips about how we plan to celebrate Cinco De Mayo this year by keeping it on the “skinny” side.

Our favorite Mexican food to make at home are fajitas. They’re pretty healthy, and our local grocery store (Jerry’s Foods) actually has fajita flavored meat and peppers ready to go in the meat department, so we just pick it up, throw it on the grill, and into our fajitas. Top with pico de gallo, lettuce, a little cheese, and some plain greek yogurt (to replace sour cream), and we’ve got a delicious meal.

The kids aren’t into fajitas, so I throw together some quick chicken and cheese quesadillas for them. In order to refrain from snacking on half a bag of tortilla chips while I do so, I usually try to have a healthier snack while prepping. Per usual, FLYJOY is a go to.

Cinco de Mayo isn’t complete without a good margarita, but I’m going to try to keep it skinny with this recipe from my FIXATE cookbook!

Skinny Margarita

Ingredients: 2 – 3 fresh lime wedges, 2 – 3 fresh orange wedges, 2 Tbsp. fresh lime juice, 1/2 tsp. honey, 1 cup ice, 1 oz. 100% agave tequila, 1 splash sweet & sour mixer

Instructions: Place lime wedges, orange wedges, lime juice, and honey in the bottom of a serving glass; muddle until well mixed. Top with ice, tequila, and mixer. Stir to mix. Garnish with a  lime slice.

I’m guessing I may need more than one of these little guys, but it’s definitely a healthier alternative! 🙂

5 Reasons I’m Glad I Traded My Gym Membership For A Home Gym

If you’ve been following my blog for a while, you’ve likely seen pictures of me carting my four little ones to the gym. During my first four years as a stay-at-home mom, it served me well. Even though it was a lot of work to get them all dressed and ready to go, as soon as I got there it was always worth it. At that point I was at home with them all day long and it was a welcomed and needed break.

After my blog took off, I found myself at a point last fall when I wasn’t able to squeeze it all in during nap time or after bed time, so I started working part-time during the day. By the time I finished working, I didn’t really feel like being away from my kids for another couple hours, so I transitioned to working out at home. I would still take them to the gym on the weekends, but we started to feel like paying for a membership wasn’t the wisest investment amongst all the other expenses we had with little kids. At the same time, I wasn’t ready to give it up! I liked having a security blanket of sorts, I LOVED the ladies who took care of the kids at the childcare center, and I liked having a treadmill available for running.

Jake and I got to talking and crunching numbers, and decided we were going to start exploring what it would look like to have a home gym for me. We shopped all over. One of the biggest things we wanted to prioritize was the quality of the equipment. We knew that if it didn’t feel like the equipment at the gym, it would likely sit in a corner of our basement and collect dust. After shopping at every store under the sun and being fairly disappointed by the lack of quality, we ended up at 2nd Wind Exercise.

If you aren’t familiar with 2nd Wind, they have the top name brands of exercise equipment from entry level price points to full commercial gear. They have new, used, and refurbished equipment, making it possible to find just about anything you’re looking for at an affordable price point.

We stopped in at the Woodbury, MN store and I have to give them major props for putting up with our walking circus of a family. Matvin and Bob did a great job helping us entertain the kids while we checked out the equipment. After checking out a bunch of options, we decided to go with this treadmill, bench, free weights, and weight rack. I do mostly at home workout videos along with some cardio, so this stuff is exactly what I needed.

Like most of the staff at 2nd Wind, Martin is a certified personal trainer who worked in a commercial gym for years. He knew the equipment inside and out and was able to make the recommendations that were exactly what we were looking for. If you’re local, be sure to ask for Martin when you stop by!IMG_6840

Three days later, the 2nd Wind truck pulled into our driveway and it felt like Christmas! The guys were promptly on time, set everything up, and tested it all to make sure it worked. They answered any and all question I had, and were excellent to work with.

After having my equipment for a few weeks now, I’m wondering why I didn’t do this sooner. For any of you who are wanting to prioritize your health with a busy lifestyle, this is an awesome way to go. Here are my top 5 reasons I’m glad I have a home gym!

1. I’m saving a lot of time. I don’t have get the kids dressed, load them up in the car, buckle them in, drive to the gym, unbuckle them, bring them to the childcare center, pick them up from the childcare center, and repeat the process on the way home.

2. I can work out whenever I want. Ideally (although it doesn’t always happen this way), I get my workout in early in the morning when they are sleeping or during nap time. This is huge because since my husband travels a lot, it’s not easy for me to get outside for a run. Knowing that I have a treadmill and weights in my basement is extremely motivating for me and gets rid of any excuses I try to have.

3. I’m setting a good example for my kids. There are many days when we’re all hanging out in the home gym together. They’re my little cheerleaders! It took a little while for them to get use to me working out, but I’m able to explain to them that Mommy needs to take care of herself so that I can be the best Mommy I can be! As of late, they’ve become my accountability partners. “Mommy, you need to go work out!!!” 🙂

4. We got rid of a monthly payment. I was spending well over $100 a month to go to the gym with the kids, and now we don’t have to worry about that. Instead, we’ve invested in high quality equipment that we’ll have for years to come!

5. I don’t have to choose between working out and time with my kids. The biggest thing I hear from friends and readers on here is that they wish they could work out, but they simply don’t have the time. I love that I’ve found a solution that allows me to work out for 30 – 45 minutes a day. I’m in better shape now than when I was in high school, and it’s all because I’ve found a way to do it at home.

If you’re considering a home gym, I asked 2nd Wind to provide some key things to look for. Eric Waklee, who is the store manager and certified personal trainer at the Chanhassen store offered some extremely helpful advice!

I asked him what the main differences are in buying equipment from Wal-Mart, Sears, ect, versus 2nd Wind. I told him that I had noticed the quality was better. He said this,

“Yes, quality is a big indicator. However, it wont be just one component that gets better but it is a combination of components. Example: bearings in the rollers, thickness of the top coating on the running deck, thickness and longevity of the belt, quality of the motor (not just the horsepower), sturdiness of the frame, better cushioning, etc. A lot of times it’s more than just the specifications you see on paper. The better brands will make sure all the parts are made with higher quality components.
Also, it is the service behind the products. These are mechanical products and they will break down at some point. When that happens does the company have the service behind the product? Do you have to call a 1-800 number and sit on hold and then wait weeks for your product to be fixed? Or can you call a local store and talk to a real person that will get your machine up and running quickly?
We have been in business a long time and we are picky on the brands we choose to carry. We want to make sure the products we carry will match our reputation.
On top of that we provide free fitness advise to our customers. It can be frustrating when someone gets into a workout routine and they don’t see results. If that ever happens call or stop in our stores. Depending on what their goals are, and what they are currently doing, we can provide advise to help kick start their results again.”

Kuiper Family Menu: January 4 – 10, 2016

IMG_4348Tomorrow is the day I’ve been waiting for! January 4th brings so much excitement to my world! I’m so pumped for the new year and all that’s to come! And I’m MOST excited to get back into a regular routine and get into a good groove again. This past week I didn’t meal plan and it was BAD. We still ate pretty healthy, but it was just random and stressful and we spent extra money on going out to eat that we wouldn’t have had to if I had planned ahead. But I’m giving myself grace since it was the holidays and schedules were all over the place. This is a NEW week!

Tomorrow I’m kicking off a HUGE new year boot camp and it’s super fun to see how motivated all my online personal training clients are! They are going to CRUSH their goals and I can hardly wait for them to feel their very best!

Without further ado, here’s what we’re eating this week! Sidenote: Sometimes we’ll switch up the menu based on what we feel like eating that day, so Monday’s meal might be made on Thursday, or vice versa, but I’ve found that just having an arsenal of recipes to pull from for the week helps a ton.

Monday: 

Breakfast: Frozen Waffles & Eggs

Lunch: Chocolately Mint Shakeology for me, peanut butter and jelly with veggies and fruit for the kids

Dinner:

Pecan Crusted Un-Fried Chicken Strips from Honeybee Homemaker (I plan to double or triple the recipe.) 

Ingredients: 1 chicken breast, 2 slices whole wheat bread, 2/3 cup pecans, 1/4 cup dijon mustard, 1 tsp. honey

Directions

  1. In a food processor, finely chop bread and pecans (until you get the consistency of breadcrumbs)
  2. Slice chicken breast into 6 strips
  3. Combine Dijon mustard and honey in a shallow dish
  4. Coat each chicken strip in honey-mustard mixture, then roll in pecan-breadcrumb mixture
  5. Take a cooling rack (like that you would use to cool cookies) and place that inside a cookie sheet. Place chicken strips on rack and bake at 400 for 20-30 minutes
  6. Serve alongside vegetables or add to your favorite salad.

Tuesday: 

Breakfast: Greek Yogurt, Toast

Lunch: Chocolate/Almond Shakeology for me, leftover chicken strips for the kids with veggies

Balsamic Peach Crockpot Chicken from Sublime Reflection

Ingredients: 10 boneless skinless chicken thighs, 3/4 cup balsamic vinegar, 1/4 cup honey, 1 small sweet onion, thinly sliced, 1 large can of sliced peaches, drained, 1 tsp. dried rosemary, Sea salt and pepper

Directions

  1. Put all ingredients in crockpot and cook 3-4 hours on low. (5 hours if the chicken is frozen)
  2. Drain the liquid off the chicken into a saucepan. Bring to a boil and reduce until it thickens.
  3. Serve the chicken with the reduced sauce spooned over the top of it.

Wednesday: 

Breakfast: Frozen Waffles, Eggs

Lunch: Chocolate/Peanut Butter Shakeology for me, leftover chicken for the kids with green beans and bananas

Dinner:

Crockpot Black Bean & Corn Salsa Chicken from Maegan Blinka

Ingredients: 2 cans black beans (drained and rinsed), 2 cups frozen corn (drained), 1 jar salsa, 3/4 cup water, 4 – 6 boneless chicken breasts.

Directions

Combine all ingredients in crockpot, cook on high 3 – 4 hours or low 7 – 8 hours. When finished cooking, shred chicken and serve alone, over rice, as a salad, with tortilla chips or in a wrap. Can be topped with sour cream, avocado and/or tomato or your favorite toppings!

Thursday: 

Breakfast: Greek yogurt parfait, peanut butter toast

Lunch: Candy Bar Shakeology for me, deli turkey for the kids and fruit

Dinner:

Crockpot Hamburgers & Bag of Steamed Veggies 

Ingredients: 2 lbs ground beef, 1 package dry onion soup mix, salt and pepper to taste, tin foil

Directions: Create a tin foil grill in the bottom of your crockpot so the burgers so cook in the grease. Mix the ground beef and dry onion soup mix together. Form patties and place on top of the tin foil grill. Season with salt and pepper. Cook on low for 2 – 3 hours. Serve and enjoy!

Friday: 

Breakfast: Oatmeal

Lunch: Mocha Shakeology for me, leftover hamburger and veggies for the kids

Dinner:

Easy Three Bean Chili from my sister-in-law’s blog, Espresso & Cream

Ingredients: 2 lbs. lean ground beef or ground turkey, 1 large (30 oz.) can crushed tomatoes, 1 (15 oz.) can tomato sauce, 1 (30 oz.) can Mrs. Grimes Chili Beans, undrained, 1 (15 oz.) can black beans, undrained, 1 (15 oz.) can white kidney beans or white great northern beans, undrained, 2 to 3 tablespoons chili powder, depending on how hot you like your chili, Salt and pepper to taste

Directions

In a large stockpot over medium high heat, brown ground beef or ground turkey. Drain off fat.
Add remaining ingredients to the stockpot. Stir to combine. Bring to a simmer. Cover to keep warm until ready to serve.

Saturday

Breakfast: Egg Bake

Lunch: Almond Chocolate Shakeology & leftovers

Family Pizza & Salad Night (Once a week we enjoy a “cheat meal.” I’ll have a huge portion of salad and my “treat” is one or two pizzas of pizza! Sometimes we make it at home, other times we go out!)

Sunday

Breakfast: Leftover Egg Bake

Lunch: Chocolate Peanut Butter Shakeology & leftovers

Dinner: Leftovers! We’ll have leftover chili or other food that’s left from the week!
